Country Scalloped Potatoes and Ham - Crock-TOBER

My friend Kelly said "hey...since it is Crock-Tober, I've got a GREAT recipe if you need one!" Don't we all love getting recipes like that? Ones we know are tried and true and LOVED by the whole family? Well, here you go. This is one of THOSE recipes! Enjoy!


8 potatoes, thinly sliced
1 onion, chopped
1 pound, fully-cooked ham, cubed
1 package dry country-style gravy mix
10 3/4 ounce can cream of mushroom soup
2 ½ cups water
2 tsp parsley flakes
1 tsp salt
2 tsp pepper
(2 cups shredded cheddar cheese)


1. Combine potatoes, onion and ham in lightly greased crock pot.
2. Combine gravy mix, mushroom soup, water and spices. Whisk until combined. Pour over potatoes.
3. Cover. Cook on low 7 to 9 hours or high 3 to 4 hours.
4. Top with cheese during last 30 minutes of cooking.
