Oatmeal Cranberry Cookies

I've been on an oatmeal cookie kick lately. I hadn't made them with dried cranberries, so I thought I'd give it a shot. Usually when you see these they have white chocolate chips, but those seem too sweet to me, so I did without. I'm sure if that's your preference, they would add in nicely.


2/3 cup butter, softened
2/3 cup brown sugar
2 large eggs
1 tsp vanilla
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup dried cranberries


Preheat oven to 375ºF.

Mix butter and sugar together in a medium bowl until light and fluffy. Add eggs and vanilla, mixing well.

Combine oats, flour, baking soda and salt in a separate bowl.

Add to butter mixture. Stir in dried cranberries.

Drop by teaspoonfuls onto un-greased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2 1/2 dozen cookies.
