Pumpkin Snickerdoodles

I heard someone talking about Pumpkin Snickerdoodles and I just HAD to find the recipe! I found a few different ones, but none that WOWED me. So I combined a couple (okay...a few) and came up with this. They're pretty amazing, if I can say that!!!


2 1/4 cups flour
1/2 teaspoon cream of tartar
1 teaspoon baking soda
1 tsp nutmeg
1 tsp allspice
1 tsp cinnamon
3/4 cup butter softened
3/4 cup brown sugar
1/4 cup sugar
1 (3.4 oz) box white chocolate instant pudding mix
2 eggs
1 teaspoon vanilla
1/2 (15 oz) can of Pumpkin
1/2 cup sugar
1 teaspoon cinnamon


  1. Preheat oven to 350F.
  2. Grease or line a cookie sheet.
  3. Sift together flour, cream of tartar, baking soda and spices then set aside.
  4. In a large bowl, cream butter, sugars and pudding mix.
  5. Add eggs and vanilla and mix well.
  6. Add flour mixture slowly until well incorporated.
  7. Chill for 30 minutes
  8. Meanwhile, combine sugar and cinnamon in a shallow bowl or plate.
  9. Roll cookies into 1″ balls then roll each cookie into cinnamon-sugar mixture to coat outer surface entirely.
  10. Place on prepared cookie sheet and repeat for remaining dough.
  11. Bake at 350F for 10-12 minutes.
